Switching Whole Wheat Flours?


I am using white whole wheat currently but want to switch to King Arthur organic whole wheat. Can I just use my starter or do I need to condition the starter?

Hello rdunnion,

By and large, the beasties don't mind what their food source is and as you appear to be only changing the brand rather than the grain type itself you should be able just to go from one to the other as easily as dipping into another packet.

I never thought twice about this sort of thing and my breads are fine. I use my rye and all-purpose flour starters across types of flour and brands. Always good.
