starting with sourdough

Hi, I'm a commercial photographer and an amateur sourdough baker, I made my sourdough starter a month ago. I'm still developing my own recipes with the percentage of ingredients based on weather, temperature, and humidity of where I live. And testing for a better proofing technique and time, in the freezer or in room temperature.
