Hello sourdough friends!!
I recently scored big and picked up an 8 rack proofing oven for $40. It is a Moffat E87, fairly old made in 1996 but everything seems to work fine. I'm still making sure water temp and air temp are where they are supposed to be, but other than that it seems to be working and is in great condition for its age. I feel like I robbed the person at $40, looks like this thing was close to $6k back in the day, and a modern version from the company costs $5300.
I found a manual online, which answered a lot of questions but still left me with some unanswered. I'm hoping someone on here has experience with one of these? Thank you for any advice!!
