I'm new to sourdough and I made starter over the course of 5 days and used this recipe: https://www.thekitchn.com/how-to-make-your-own-sourdough-starter-cooking...
Then I tried to bake a loaf with this recipe: https://www.thekitchn.com/how-to-make-sourdough-bread-224367
I did my best to follow both recipes precisely but my bread turned out so flat! No spring at all! Everything looked great as I was following along with the recipe's pictures.
I suspect I didn't give it enough time in the proofing basket. (I gave it 3.5 hours.) I've got the second loaf sitting in the fridge overnight and hope it'll be more successful tomorrow!
What did I do wrong? Thanks in advance!
