Here is a fun fast bread to make that I just can't stop eating. They have a nice crunky crust with a soft crumb. I brought a bunch of them to work and we are just gobbling them down. I like the look of them too with all of their lumps and bumps. This is a very simple bread to make, it is just flour, water, and salt. Did you slash them at all?

Looks like some of them have slashes dosen't it? No, I didn't slash them at all. The picture makes them look larger than they really are. I thought about slashing them but figured they were to small and wet. The crumb is very ciabatta like with lots of big ireggular holes.
I was wondering about the crumb LD..."big irregular holes" you say..I like em.. very rustic a bit like a big soft Italian Grissini. I have a special dinner party coming up and these would be a smash hit I'm sure.

Yea Johnny the overall hydration of the final dough is over 75% so you get an idea of what kind of breads have that hydration and the crumb they have. I didn't think about the hydration of the preferment being at 100% and the overall amount of preferment being 95% when I came up with my formula. When I look back now I was trying for something in the 65% hydration range but I can't argue with the results. I already have a request for them again for a birthday. Grissini is something that I don't think I have ever had, I will be sure to check it out if I get a chance.
