I have finally got the hang of it!

Took me a while but now I have a great bread.

 

I use 1 cup of starter (100% hydration) 1 cup of water and 3 cups of flour, 1 tablespoon of salt.

Mix it in the bread machine.

Take it out and put it in a loaf tin.

Rise all night. Doubles in volume!

Bake for 40 min at 200 C.

 

This dought is rather thin and sticky so it will nog hold it's shape without a tin.

 

Tastes great, not too sour which I don't like.

Am I reading this correctly? You're only using one overnight rise?

 

Our recipes are almost the same. I'm using 1/4 cup of milk instead of your 1 cup of water. I also add 2 teaspoons of honey.

I get a full rise within 4 hours then bake it at 350 for 40 minutes.
